It’s breakfast and it’s good.

I’ve made 2 batches of this muesli since I got home from England and I love it. It tastes so good and seems to give me great fuel for the day, especially on gym or swim days. This recipe makes 4 portions. I make it at night and it’s ready by morning, and lasts a couple days.

2 Cups oats
3/4 Cup dried, shredded coconut
1/2 Cup dried fruit (I got a packet of mixed, dried blueberries, cranberries and cherries and next time I’m using apricots)
2/3 Cup milk
2/3 Cup apple juice
2/3 Cup plain yogurt
1 granny smith apple, grated
1 Tbsp honey or agave

Mix together. Top with fresh berries. So good.

And the main reason I went to England, apart from stocking up on superior Smarties, Polo mints, and spray on deodorant, was for my cousin’s wedding. Traveling that far made me think that I needed to do something really special for a gift, and we all know that the only special thing I do is quilting. It took a while to decide on a pattern and fabrics, and a couple false starts, but here is the end result:

That is their initials I pieced into the back. The very happy couple were thrilled and I felt relieved. It’s always a joy knowing your hard work is appreciated.

Family. I wish I had way more way closer. When all is said and done, I may consider a long distance move for a couple years.
