Oh. Yum.

Springtime is rhubarb season and I got a bunch today at the Saurauren farmers market and made it into a cobbler. I’d link but I don’t know how, but trust me on this one, it came out perfectly. I was worried it would be sour but it was not! Go! Make one! NOW!

    I would like that recipe when you have time, ryan loves rhubarb, and we have a big patch of it, I never know what to do with it

    I sent this to you on fb too, but in case anyone else wants it:

    1 stick butter, melted

    1.25 C sugar

    1 C self-rising flour

    1 C milk (I used goat milk because that’s what we have here these days)

    2 C blackberries

    Whisk together 1 C sugar, flour and milk, add butter, mix

    Butter a baking dish (I used an 8×8 square dark metal pan) and pour in batter, sprinkle in berries and 1/4 C sugar over top.

    Bake at 350 for 1 hour (although I took mine out at 45 min because it smelled good, was brown around the edges and was cooked all the way through).

    ( obviously I used rhubarb, cut into 1/2″ pieces, 2 cups worth)

    Mmm, my mom made me rhubarb strawberry cobbler last week. So good! It made me think I should plant some in my yard.
