Crumbles be damned, from this day forward I am a Cobbler girl. I think I got this recipe from PW and it’s a total winner:
1 stick butter, melted
1.25 C sugar
1 C self-rising flour
1 C milk (I used goat milk because that’s what we have here these days)
2 C blackberries
Whisk together 1 C sugar, flour and milk, add butter, mix
Butter a baking dish (I used an 8×8 square dark metal pan) and pour in batter, sprinkle in berries and 1/4 C sugar over top.
Bake at 350 for 1 hour (although I took mine out at 45 min because it smelled good, was brown around the edges and was cooked all the way through).
Eat with whipped cream and laugh your troubles away.

I vote ‘yes’ on peaches. We’re going to do blueberry. I was thinking of ways to fancy it up a bit, adding vanilla or cinnamon or whatever and realized, nope, it’s perfect the way it is, it’s the simplicity that makes it SO good.
Uh, technically this is 2 apartments, sort of, so we have a kitchen and Ari has her own kitchen, but she just has freezies and juice boxes in her fridge and doesn’t use the stove.
I can’t make more than one of these a week, it would be too easy to become morbidly obese in a month if I did.
Made 1 1/2 recipe for friends for dinner with peaches (fresh Niagara ones) and some wild blueberries and it was a huge hit. Will definitely make it again. I definitely doesn’t need any fancying – delicious as it is!! xoxo
