Theres something called multi melanin but white is the lack of melanin so that wouldnt really be an answer.

I have had hairs that I’ve noticed when they fell out or whatever that had turned white partway through. So the bottom ends were the regular color, and then they turn white along the way.

I guess that’s how it works? I think I always was under the impression the regular falls out and it grows back white. But apparently not so much.

But I have no idea why yours would change twice. Other than.. Surprise! Pretty!
