A tale of epic kludgery…

I’m not sure if this will ever appear on the website in question, but as far as I am concerned There! I Fixed It! totally applies to the following:

For some reason I decided I’d like to make truffles to hand out at xmas time. I’d looked on foodgawker and Martha Stewart for recipes and then, surprise surprise, a very simple recipe appeared in the most recent issue of Everyday Food. This is a magazine I buy every month and have had subscriptions to in the past. I try, each month, to do at least one recipe, just to keep things fresh, but haven’t been terribly successful in recent months. Anyway, the recipe had 4 basic ingredients: chocolate, heavy cream, vanilla and salt.  Sounds easy, right? Well. Here’s where things go terribly wrong…

I chopped up the chocolate but instead of weighing it (and YES, I do have a kitchen scale!) I was lazy and measured it by volume. I followed all the instructions to a tee, even leaving it in the fridge to cool longer than recommended (while out and about), but it never set up. I guess I didn’t use enough chocolate? Anyway, it refused to roll into balls, being the consistancy of thick pudding. Delicious, creamy, expensive pudding…I didn’t want to throw it out and I didn’t want to just plop it into bowls and serve as is so I decided to make a bunch of crepes and layer them together.

Voila.

It tastes great, lemme tell you. It’s a little rubbery and hard to eat neatly, and in hindsight, I probably could have rolled the chocolate up inside the crepes in a more traditional way and sprayed them with whipped cream…but, you know, hindsight 20-20 and all that.

    It looks delicious! I’m glad you could turn it into something else. It’s frustrating when you follow all the instructions and something doesn’t come out.

    If you ever get it to the consistency of icing rather then pudding and still have trouble forming balls when cold- try using powdered cocoa or icing sugar -I used hot chocolate mix ;) and use it like you would flour when baking. Makes life so much easier!
    I like the idea of truffle crepes tho, add some cherries and make it a christmas treat!

    If you’re still planning on truffles, try this:
    3/4 c. raw cashews
    3/4 c. liquid (you can use water but port is my favourite)
    1 lb. bittersweet or semisweet chocolate
    cocoa powder

    blend the cashews & liquid in a food processor till it’s totally smooth. Melt the chocolate and mix it with the cashews. Chill until it’s solid enough to roll into balls. Do so. Then roll the balls in cocoa powder.

    Sometimes I put in different spices as well, cinnamon is good, chipotle chili is really good, orange or peppermint would probably be good as well.

    Honestly, and I know this will sound ridiculous, I will probably never try this again. I just can’t see myself shelling out the dough (and not that it was an enormous amount, but…) for what will potentially be wasted. The cake’s barely being eaten (I’m the only one, one slice a day) so it will get tossed, and the leftover chocolate goop will get chucked out too.

    And I HATE wasting food! Hate it!

    I usually just lurk, but I hate throwing out food too, so I had to comment. If you haven’t tossed it yet, the cake type object will freeze fairly well. It’s easiest in slices, though. Also, the goop can be frozen, and could be used to make wonderful icings, either by simply adding icing sugar, or (my favourite) adding it to a cream cheese icing, to make a ganache cream cheese icing. Hope I was in time… Chocolate is an awful thing to waste :)

    ahhh.. the pancake cake. a friend of mine swears by it. it is always a bit rubbery, but always delish :)
