Homemade ‘nola bars

So, as always, I mean to take pictures during the cooking process and then forget. Suffice it to say, the day after, nothing looks as pretty despite it still tasting deliciously. Delicious. Whichever.

When was the last time I brown nosed foodgawker? Well, I slurp up that blog daily, bookmarking untold numbers of recipes and then promptly forgetting about them. Yesterday, however, I actually made something!

I used this recipe-I’d never even heard of brown rice syrup before. It’s gross, totally gross, but it worked in this recipe, and now because I have half a jar left, I will be forced to make them again, oh, boohoo poor us. I took a tiny liberty with the recipe, I added 1/4 cup flax seeds, and same amount of coconut.  Shannon says they’re better than the Starbux version, which I think are more like over-hyped rice crispy treats.

Oh, and there was a big old hair in the one I just ate. Mmm.

    Partly I want to make them again with marshmallows. In a really shameful way.

    I single handedly snarfed half a bag of nearly year old marshmallows in front of a bonfire while Clive and Gillian were here.

    “No really, I swear I’m all about local eating and healthy food, just let me light another one of these on fire….”

    Just so long as you used local sticks, not ones bought at IKEA or in Chinatown.

  5. Glad they turned out, Caitlin. I’m even more glad you added flax and coconut. I, too, have half a bottle of brown rice syrup left over and will be making a second batch — with coconut and flax for sure!

    i had my first one today caitlin jane and it was sooo good. honestly the BEST granola bar i’ve ever had :) :)!

    And thanks to you, Charmain, for real. My plan is to cut the almonds in half next time, bump up the fruit, maybe raisins or dates. Or raisins AND dates. Ooh. I might toast the coconut too, but not the flax.

    These were super delicious… I’ve eaten tons of them. Way better than anything similar I’ve bought at a store.

    I am going to have to try out this recipe! I’ll letcha know how they turn out. I’m staring at them and thinking… mmm dried apple and cinnamon.

  10. Go for it Caitlin! I hadn’t thought of dates. Good call.

    I made my second batch with walnuts, flax, toasted coconut and candied pineapple. I also used coconut extract for half the vanilla, but that part was overkill — NOT recommended.

    No one here likes dates, other than me, and there’s no way I could eat all the granola bars.

    They do like dried blueberries, so i might try those.
