Have you ever made something from scratch (well, more or less) and it came out pretty much perfectly? I experienced that tonight. At work, I made us tomato sauce and it was so good. I could have had a bowl of that with no pasta and I would have been happy.
Sauce:
1/2 zucchini, small dice
4 medium mushrooms, small dice
1 clove garlic, minced
3 red peppers, roasted at 425 for 1/2 hour until the skin is black, peeled, seeds, stem and ribs removed
1 450mL can Aylmer Accents spicy red pepper diced tomatoes
Saute zucchini, mushrooms and garlic in a little olive oil until softened, season with salt and a tablespoon Italian seasoning.
Puree roasted red peppers and tomatoes together, add to cooked veggies, bring to a simmer, cook until thickened, about 15 minutes.
Trust me. It was great. The only thing I would do differently if I was at home is add a knob of butter at the very last second while it’s still simmering.
That looks so yummy.
I’ll have to give your recipe a whirl this weekend.

Why would the butter make it better?
Cold butter added to a simmering sauce makes it smooth, shiny and extra delicious. I’m no chef, but this is one easy trick I know that works every time.

Hey, Michael, what do you call it when you add cold butter to a simmering sauce right at the end? And why do we do this apart from the extreme deliciousness it causes?

the french term is “mounte au beurre”" something like that. it just means finish the sauce with butter.you add it cold at the end because if you add it to soon the sauce can break(split) and it will be nasty rather than the desired extreme deliciousness you’re looking for. mounting a suace….shiny and yummy
